PICKLE BEETS 
2 gallons fresh beets, washed & stems cut to about 1 inch from top
4 c. vinegar
6 c. sugar
1/4 c. allspice

Cover fresh beets in boiler with water. Cook until tender. Pour off hot water; run cold water over. When cool enough, peel beets and slice large beets; if small, leave whole. Bring sugar, vinegar and allspice, tied in clean cloth (so spices won't be loose in beets), to boil with beets that have been added. Heat thoroughly. Remove allspice bag. Place beets in jar and seal.
