POTATO SOUFFLE 
4 c. cooked, mashed potatoes
8 oz. cream cheese, softened
1 beaten egg
1/3 c. finely chopped onion
1 (2 oz.) jar chopped pimento
Salt to taste
Pepper

Combine potatoes with cream cheese and mix well. Add remainder or ingredients. Place in 1 quart baking dish (sprayed with Pam). Bake at 350 degrees for 45 minutes. Makes 6-8 servings.
