CHICKEN S'MORE 
1 (3 1/2 lb.) fryer chicken
1 lg. onion (whole)
1 lg. stalk celery, cut in half
2 cloves garlic
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. chicken fat oil

Wash the chicken, removing the two globs of fat that are tucked into the cavity in the rear. Render the fat to get 1/2 cup of golden oil.

Cut the chicken into serving pieces. Heat the oil and brown the pieces on all sides until golden brown. Add the salt, pepper, garlic, celery, and whole onion to the pot. Cover and simmer for about 45 minutes or until the chicken is done. Remove the chicken to a warm place until serving.
