RAISIN RICE PUDDING 
2 eggs
1/3 c. sugar
1/4 tsp each: nutmeg, salt, lemon juice
1/2 tsp. vanilla
2 c. milk, scalded
1 c. cooked rice
1/2 c. raisins, rinsed in hot water and drained

Beat eggs. Add sugar, nutmeg, salt and vanilla and lemon juice. Beat at once until blended. Gradually stir in hot milk, then rice and raisins. Pour into 1 1/2 quart baking dish. Place sliced lemon on top. Sprinkle with cinnamon. Place in pan of hot water and bake in 350 degree oven for 1 hour. 4-6 servings.
