CORN FRITTERS | |
8 3/4 oz. can whole kernel corn 1 1/2 c. all-purpose flour 3/4 tsp. salt Oil for frying Milk 1 tbsp. baking powder 1 egg, beaten Drain corn, reserving liquid. Add enough milk to corn liquid to make 1 cup. Stir together flour, baking powder, and salt. Combine egg, milk mixture, and corn; add to dry ingredients. Mix just until moistened. Carefully drop batter by spoon into 2-3 tablespoons oil. Cook about 2 minutes on each side or until golden brown. Drain on paper towel. |
