BANANA BREAD 
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla or almond flavoring
Grated rind of 1/2 a lemon
1 c. mashed ripe banana
2 tbsp. sour cream
1/2 c. chopped pecans, walnuts or macadamia nuts (optional)

Mix together flour, baking soda, baking powder, and salt. Set aside. Cream butter and sugar, beat in eggs, vanilla, lemon rind, bananas, and sour cream. Stir in dry ingredients. Add nuts if desired. Pour into a greased loaf pan and bake in preheated 350 degree oven for 1 hour or until toothpick inserted in middle comes out dry. Remove from pan and cool on rack.
