CHEESY BROCCOLI SOUP 
lb. frozen broccoli
2 tbsp. butter
1 carrot, grated
1 qt. half and half
Salt & pepper to taste
1 onion, chopped fine (or dry)
1 can clear chicken broth
1/2 lb. Velveeta cheese

In small amount of water, cook broccoli with salt and pepper until tender. Then add butter, onion, carrot and broth. Bring to a boil and add half and half. Reheat and thicken. (I use Wondra.) Add cheese and simmer about 45 minutes.
