CHEESY VEGETABLE SOUP 
1/2 c. chopped celery
1/2 c. chopped carrots
1/4 c. chopped onion
1 tsp. parsley flakes
3 c. chopped potato
2 c. chicken broth
1/2 tsp. salt
Dash pepper
2 c. milk
2 tbsp. flour
1/2 lb. cubed Velveeta cheese
1 c. cooked, mashed broccoli
1 c. cooked, mashed cauliflower

Simmer first 5 ingredients in broth until tender. Add flour and seasoning to milk. Stir into vegetables and bring to a boil. Add Velveeta cheese and keep on low until melted. Add broccoli and cauliflower last.
