3 bunches spinach
1 (1 lb.) pkg. bean sprouts (optional)
8 slices bacon, fried and crumbled
2 eggs, hard-boiled and sliced
1 can water chestnuts, sliced
About 12 or 13 mushrooms, sliced

DRESSING (enough for 2 salads) :

1 c. oil
1/2 c. vinegar
1/3 c. catsup
1/2 c. sugar
1 sm. onion, grated

DRESSING: Put all in jar and shake.

Wash spinach well, break in pieces, shake dry, add rest of ingredients and dress with half the salad dressing. I put cleaned spinach and other ingredients in separate plastic bags and put all together at last minute. Serves 12.
