ZUCCHINI SQUASH RELISH 
10-12 c. chopped zucchini
4 c. onion
1 sweet red pepper
4-5 tbsp. salt

Grind zucchini, onion and pepper on a coarse blade. Sprinkle with salt and let stand 1 hour. Drain, then rinse in water. Drain well and squeeze out. Add remaining ingredients.

4 1/2 c. sugar
2 1/4 c. white vinegar
1 tsp. mustard
2 tsp. celery seed
1/2 tsp. pepper
1 tsp. nutmeg
1 tsp. turmeric
2 tbsp. cornstarch

Boil 8-10 minutes. Put in sterilized jars; seal and label.
