BAKED FISH WITH MUSHROOMS 
4 fresh or frozen fish fillets or steaks
2 slices bacon
1 c. sliced fresh mushrooms or 1 (6 oz.) can sliced mushrooms, drained
1/2 c. green onion, bias sliced into 1 inch lengths
3 tbsp. butter
1/4 tsp. dried tarragon
1/4 tsp. paprika

Thaw fish, if frozen. In a skillet cook bacon; reserve drippings. Crumble bacon, set aside. Cook mushrooms and onion in drippings until tender. Place fish in shallow baking dish. Sprinkle with salt. Combine onion, mushrooms, butter and tarragon. Spread on top of fish. Sprinkle with paprika. Bake in a 350 degree oven for 15 to 20 minutes until fish flakes easily when tested with fork. Garnish with crumbled bacon. Makes 4 servings.
