BANANA LOAF 
1 3/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt (optional)
3/4 c. sugar
1 1/4 tsp. cream of tartar
2 eggs, beaten
1/2 c. vegetable oil
2 ripe bananas, mashed

TOPPING:

1/2 c. sugar
1/3 c. flour
1/2 tsp. cinnamon
1/4 c. butter

TOPPING: Combine dry ingredients, cut in butter until mixture is crumbly.

Combine dry ingredients in large bowl. Make well in center of mixture. Combine remaining ingredients. Add to dry mixture, stirring until moistened. Pour batter into greased 9x5x3 inch loaf pan. Sprinkle with Streusel Topping. Bake at 350 degrees for 45 minutes or until wooden pick comes out clean. Cool in pan for 10 minutes. Then remove onto wire rack.

To double recipe, use 3 to 3 1/2 cups mashed bananas. Double topping. Makes 8 (8x6 inch) loaves. OPTIONAL: Nuts. HINTS: Keep over-ripe bananas in freezer until you need them.
