GLORIA'S ITALIAN PASTA WITH
CHESTNUTS AND MUSHROOMS
 
14 fresh chestnuts
1 tbsp. butter
1 tbsp. safflower oil
2 tbsp. shallots, finely chopped
2 c. mushrooms, sliced
1 (8 oz.) dried boletus mushrooms (soaked in water 15 minutes) or
2 c. sliced wild fresh mushrooms
1/2 c. stock
1/4 c. sweet marsala (imported florio) or sweet sherry
Salt & freshly ground pepper to taste
3 tbsp. Italian parsley, finely chopped
1/2 lb. pasta, cut such as farfalle, penne, etc.
Chopped Italian parsley for garnish

Serves 3-4.
