MARKET BEAN SOUP 
1 lb. bean soup mix
1/2 lb. smoked sausage
1/2 c. chopped onion
1/2 c. chopped celery
1 chopped carrot
1 med. can tomatoes
Juice of 1 lemon
2 tbsp. Worcestershire sauce
1 tbsp. basil
1 clove garlic, minced
1/2 tsp. pepper
Parmesan cheese

Soak the bean mix overnight. Drain. Add 3 quarts water and simmer gently for 1 hour. Add all ingredients except cheese and sausage; simmer for 1 more hour. Add sausage and simmer for 1 more hour. Serve hot with cheese. Serves 4-6.
