STIFADO 
2 tbsp. olive oil
3 lbs. boneless beef, cut into cubes
3 lbs. sm. whole onions
1 c. beef broth
1 tsp. cinnamon
1 tsp. cloves
1 c. red wine
1 sm. can tomatoes
1 bay leaf
2 garlic cloves

Pat beef dry. Roll in salt and pepper mixture. Brown thoroughly in olive oil. Remove and brown onions slowly. Add remaining ingredients and bring to a boil. Transfer to an oven proof casserole. Bake 1 1/2 hours at 325 degrees, covered. Serve with noodles and sprinkle with Kalamata or other good black olives.
