HONEYED CARROT PENNIES 
6 med. carrots, cut in rounds
2 tbsp. butter
3 tbsp. water
1/2 tsp. salt
1 tbsp. honey
1 tbsp. half and half
2 tbsp. chopped parsley

Place carrots in skillet with butter, water and salt. Cover and simmer 10 to 15 minutes, or until barely tender. Add remaining ingredients and simmer uncovered 2 minutes longer.
