TOMATO SHRIMP CUP 
1 c. cooked rice
3/4 c. diced cucumbers
3/4 c. chopped green peppers
1 c. chopped celery
1 tbsp. chopped onion
1 lb. shrimp, cooked and cut up

Mix all with mayonnaise and put scoop of mixture on half tomato. Garnish with whole shrimp and thin slices of cucumber with skin on. Serve on plate with cucumbers, egg slices and crackers.
