YEAST ROLLS 
1 qt. milk
1 c. sugar
1 c. shortening
1 tsp. salt
1 or 2 pkgs. yeast
1/2 c. warm water
9 c. flour, divided
1 tsp. baking soda
1 tsp. baking powder

Scald milk, sugar, shortening and salt. While cooling, mix yeast in warm water. When mixture is cool, add yeast and 8 cups flour (I use self-rising). Let rise; around 2 hours or double in size. Then add soda, baking powder and remaining 1 cup flour. Mix into dough. Place in refrigerator until ready to use. Can stay in refrigerator for a week. Excellent to make ahead for the holidays. Better made 2 or 3 days ahead.

When you want to use, flour hands and dough on top; make into balls or patties; place in greased pan or sheet and let rise. Bake at 350 to 400 degrees. Serve with butter.
