SQUASH CASSEROLE 
1 sm. onion
4 fresh squash (sliced) summer or zucchini
Salt and pepper
8 oz. sour cream
1 can cream of chicken soup
1 stick butter
1 pkg. stuffing mix
Grated cheese, optional

Fry onion and squash until tender. Drain. Mix sour cream and soup. Fold in squash. Melt butter and pour over stuffing. Top squash mixture with stuffing. Works great in a 9 x 13 inch pan. Top with cheese. Bake 20 to 30 minutes at 350 degrees.
