POTATO DUMPLINGS 
4 c. grated potatoes
3 tsp. salt
4 tsp. baking powder
5 c. flour
1 ham bone

Heat ham bone in water for 1 hour. Remove ham and keep warm in oven. Heat ham water to boil.

Combine flour, baking powder and salt, mix with potatoes. Using floured hands, form into balls and drop into ham water. Cook 1 hour. Watch carefully so they do not stick to bottom of kettle. Keep dumplings lightly boiling until done. Makes 12-15 dumplings.
