1 sm. head chopped cabbage (1 qt.) 1 med. head chopped cauliflower (3 c.) 2 c. chopped onion 2 c. chopped green tomatoes (about 4 med.) 2 c. chopped green sweet peppers (about 4 med.) 1 c. chopped sweet red pepper (about 2 med.) Combine chopped vegetables. Sprinkle with 3 tablespoons salt and let stand 4 to 6 hours in a cool place. Drain well. Combine and simmer 10 minutes: 1 1/2 c. sugar 1 tsp. turmeric 2 tsp. celery seed 2 1/2 c. vinegar 2 tsp. dry mustard 1/2 tsp. ground ginger Add vegetables and bring to a boil for 5 minutes. Pack boiling hot into sterilized jars leaving 1/8" head space. Adjust caps. Yield: about 4 pints. |
