WATERMELON PICKLES 
3 c. sugar
1 c. vinegar
1/4 c. water
1 tbsp. pickling spice (tied in cheesecloth bag)

Boil watermelon rinds until clear and tender; drain. Make a syrup of the sugar, vinegar, water and spices (may add food coloring if you like). Bring the rinds to a boil in the syrup and pack in sterilized jars.
