ORANGE CARROT SLAW 
1 sm. head cabbage, shredded
3 to 4 carrots, shredded
1 (6 oz.) can orange juice concentrate, undiluted and thawed

Mix together the shredded cabbage, shredded carrots, and the thawed orange juice concentrate. Serve on a cabbage or lettuce leaf. May be garnished with orange sections and or pineapple chunks.

Note: When my husband, Colonel Paul N. Horton was stationed in Mainz, Germany we were unable to buy lettuce in the commissary for a few weeks. I came up with the above recipe and our family and guests enjoyed it in place of the usual tossed lettuce salad.
