PINEAPPLE WALNUT DESSERT 
7 1/2 oz. pkg. vanilla wafers, crushed
1 c. butter
1 c. extra fine granulated sugar
2 eggs
2 tsp. vanilla
1 c. walnuts, finely chopped
2 c. crushed pineapple, well drained

OPTIONAL:

8 oz. whipped cream
Maraschino cherries
Mandarin oranges

Crush vanilla wafers to fine crumbs (makes about 2 cups). Reserve 2 tablespoons. Cream butter to consistency of mayonnaise. Add sugar gradually, while continuing to cream. Add eggs one at a time, beating well after each addition. Add vanilla and mix well. Serves 10 to 12.
