ZUCCHINI PINEAPPLE BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 tsp. vanilla 2 c. grated zucchini with skin, no seeds 3 c. flour 1 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 1 c. crushed pineapple, drained 1 c. chopped walnuts In large bowl combine with mixer; eggs, sugar, oil and vanilla. Hand mix in zucchini. Sift flour, powder, salt and soda; add to mixture. Mix well with hand. Add pineapple and nuts. Mix well. Grease and flour 2 loaf pans. Bake 325 degrees for 1 hour. |
