PUMPKIN PIE ROLL 
3 eggs
1 c. sugar
1 tsp. lemon juice
1/2 tsp. salt
3/4 c. self-rising flour
2/3 c. pumpkin pie mix
1 c. chopped pecans
1 pkg. cream cheese
2 c. powdered sugar

Beat eggs. Gradually add sugar, pumpkin pie mix and lemon juice. Add salt and flour. Spread on greased and floured jelly roll pan. Bake at 350 degrees for 10 minutes. When done, turn out on cleaned dish towel and roll up. Put in refrigerator to chill (1 1/2 hours).

Remove from refrigerator and unroll. Spread cream cheese and powdered sugar filling over cake and re-roll. Wrap in foil and chill. When ready to serve, slice very thin.
