TOFU EGG SALAD 
4 oz. tofu
1 to 2 tbsp. any combination chopped celery, green pepper, chopped onion
Mustard
Dill
Curry powder or turmeric
Mayonnaise
Chopped carrots

Slice and drain tofu on paper towels. Mash tofu. Add celery, and/or green pepper and onion to taste. Add enough mayonnaise to make creamy. Season with one or all of the above or others.
