CANDIED YAMS 
4 medium yams
1 c. sugar
dash of salt
1 tsp. cinnamon
1 tbsp. flour
1 stick butter
1/2 c. water
Lemon or orange slices, optional

Cut up yams like thick french fries. Place in shallow baking dish.

Mix sugar, salt, cinnamon and flour. Cover potatoes with dry mixture. Dot with butter. Add orange slices or lemon slices and water.

Bake at 350°F until potatoes are tender and syrup is thick. Baste or turn frequently. Do not overbake.

Serves 4-6.
