COCONUT MACAROONS 
2 egg whites
1/2 tsp. vanilla
Dash of salt
2/3 c. sugar
1 (3 1/2 oz.) can flaked coconut (1 1/3 c.)

Beat egg whites with vanilla and salt until soft peaks form. Gradually add sugar, beating until stiff but not dry. Fold in coconut.

Drop rounded teaspoonfuls on greased cookie sheets. Bake at 325 degrees about 20 minutes. Immediately remove cookies to rack. Makes 18.
