COCONUT CRUMB PIE 
3 egg yolks
1/4 tsp. salt
2 tbsp. butter, soft
1 1/4 c. sugar
1/2 c. milk
1/4 tsp. lemon extract

Mix above well; add 1 cup coconut, chopped fine. Fold 3 stiffly beaten egg whites into first mixture; pour into crust, bake at 350 degrees about 40 minutes.
