STRAWBERRIES IN CREAM ICE CREAM 
5 c. sliced strawberries
1/2 tsp. unflavored gelatin
1 c. heavy cream, whipped
Sugar substitutes to taste, about 8

NOTE: Add 4 tablespoons water to strawberries while sitting.

Place strawberries in a medium size bowl; add sugar substitutes. Cover and set aside for 2 hour, stirring every 30 minutes. In a small saucepan drain juice from strawberries and add gelatin to juice and cook over low heat until gelatin is dissolved. Place strawberries in a blender and blend well. Combine and mix well and refrigerate until mixture begins to thicken. Then fold in whipped cream. Place in ice cream maker and process until thick and creamy. Makes 1 quart.
