MINESTRONE SOUP 
1/2 - 1 lb. sweet Italian sausage
2 tbsp. olive oil
1 c. diced onion
1 clove garlic, minced
1 c. diced carrots
1 tsp. basil
1 tsp. oregano
2 sm. zucchini, sliced
1 (15 oz.) can Italian tomatoes, undrained
2 cans beef broth
2 c. shredded cabbage
Salt & pepper to taste
1 (15 oz.) can white kidney beans or 1 pkg. frozen baby limas
1/2 c. raw rice
1 c. red wine
1/2 pkg. onion soup mix

Cut sausage into 1/2" pieces and brown in oil. Add onions, garlic, carrots and herbs and cook for 5 minutes. Add zucchini, tomatoes, broth, cabbage and seasoning. Bring to a boil. Reduce heat and simmer one hour. Add beans, rice, wine and onion soup mix. Cook another 30 minutes until rice is done. Serve topped with Parmesan and parsley.
