LOW-CHOLESTEROL ASIAN VEGGIE
CASSEROLE
 
This recipe is eaten at least twice a week in my home. This casserole is very healthy and full of good cholesterol (monounsaturated and polyunsaturated).

2 (10 oz. ea.) pkgs. frozen veggies (I use Birds-Eye Asian Medley SteamFresh)
1/2 cup chopped yellow onion
1 cup chopped celery
1 cup shredded Mozzarella cheese (fat free)
1 cup mayonnaise (Hellmann's Olive Oil)
1 cup crushed oyster crackers
1/2 cup (1 stick) butter, melted (Smart Balance)
non-stick cooking spray (Pam)

Preheat oven to 375°F.

Cook vegetables according to package directions (I use my microwave).

Mix cooked vegetables, onion, celery, Mozzarella cheese and mayonnaise.

Spray glass baking dish with Pam and place vegetable mixture into dish.

Top with crushed oyster crackers and drizzle melted butter over crackers.

Bake at 375°F for 25 minutes.

Serves 6 to 8.
