ARTICHOKE CHICKEN SALAD 
1 pkg. chicken-flavored Rice-A-Roni
3 (3 1/2 oz.) jars marinated artichoke hearts, drained and rinsed
4 green onions, chopped (no tops)
1/2 c. chopped green pepper (optional)
1 1/4 c. chopped black olives (do not use pre-chopped olives)
2-3 whole chicken breasts, cooked, boned and diced
1-2 c. mayonnaise
Parsley

Prepare Rice-A-Roni according to package directions. Combine all ingredients except mayonnaise. Add 1 cup mayonnaise to chicken mixture, adding more until desired consistency is reached. Garnish with parsley and serve. Serves 12-14.
