CHICKEN-ARTICHOKE SALAD 
1 (7 oz.) pkg. chicken flavored rice mix
6 green onions, sliced thin
1/2 c. chopped green pepper
1/4 c. sliced pimento
2 (6 1/2 oz.) jars marinated artichoke hearts
1/3 c. mayonnaise
1/2 tsp. curry powder (or to taste)
2 c. diced cooked chicken
1/3 c. dried currants

Prepare the rice mix according to directions, omitting butter. Combine the rice, onion, green pepper and pimento. Drain marinade from artichoke hearts and pour over rice mixture; slice artichokes and set aside. Add mayonnaise and curry to mixture and mix well. Add artichokes, currants and chicken; toss lightly. Chill well. Serve on lettuce leaves. Makes 8 servings.
