ZUCCHINI CASSEROLE | |
1 lb. ground beef 1 onion, sliced & separated into rings 3-4 c. zucchini, peeled & cut up 1 (8 oz.) can tomato sauce 1 can tomato soup 1 lg. tomato, sliced 1 can French fried onions (Durkee) 1 tsp. salt 1/2 tsp. pepper 1/2 tsp. oregano 1/2 tsp. garlic salt 3/4 c. cheddar or Mozzarella cheese Brown beef; drain. Add onion and cut up zucchini. Cook until barely tender. Add tomato sauce, soup and seasonings; mix well. Pour into casserole. Sprinkle grated cheese over tomatoes. Bake at 375 degrees for 25 minutes. Sprinkle French fried onions and return to oven for 5 minutes or until brown. Cook, uncovered unless cheese gets too brown, then cover. |
