GRANDMA FOX'S PEANUT BUTTER
PINWHEELS
 
1/2 c. mashed potatoes (cold)
4 c. confectioners' sugar
1/8 tsp. salt
1/2 tsp. vanilla
1 c. creamy peanut butter

Beat first three ingredients together well. Add 1/2 teaspoon vanilla and stir until well blended. Turn one half mixture onto board lightly dusted with confectioners' sugar. Roll into a rectangle 1/4 inch thick. Lightly spread 1/2 cup peanut butter over rectangle.

Roll up from short side, jelly roll fashion. Repeat process with second half. Refrigerate until firm. Slice thinly. Make this on a cool day.
