GREEN PEPPER TOSTADAS 
1 tbsp. vegetable oil
1 c. green pepper, diced
1 c. onion, coarsely chopped
3/4 c. (one 16 oz. can) coarsely chopped fresh or well-drained regular canned tomatoes
1/4 c. 1% fat cottage cheese
4 (6 inch) corn tortillas
1/2 to 3/4 c. part-skim Mozzarella cheese, grated
Black pepper
3 c. lettuce, shredded

Heat oil in a medium sized saucepan over moderate heat. Add pepper, onion and tomatoes and cook 3 to 5 minutes, until juicy and wilted. Stir in cottage cheese and cook, stirring constantly 2 more minutes. Heat oven to 375 degrees. Put tortillas on baking sheet and bake 3 minutes until crisp. Spoon green pepper mixture over tortillas and sprinkle with Mozzarella cheese. Bake about 5 minutes until cheese is melted. Sprinkle with pepper and slide onto lettuce-lined dinner plates. Serves 4.
