SAUSAGE AND RICE | |
2 lbs. sausage, crumbled up 1 c. finely chopped green peppers 3/4 c. chopped onion 2 1/2 c. coarsely chopped celery 2 (2 oz.) pkg. Lipton chicken noodle soup mix 4 1/2 c. boiling water 1 c. uncooked rice 1/4 c. butter 1/2 tsp. salt Brown sausage in large skillet. Pour off excess fat, but leave enough to saute celery, etc. Combine soup mix and boiling water in large saucepan and stir in rice. Cover and simmer 20 minutes or until tender. Saute pepper, onion, and celery. Cook it until tender. The amount will cook down. When the rice is done, stir in the sausage mixture and salt and mix well. Pour into a greased baking dish about 8x12x2 inches. Pour the melted butter over the top. Bake at 375 degrees for 20 minutes. Serves 4 or 5. |
