GRAHAM MUFFINS 
1 c. sifted flour
1/4 tsp. salt
1 c. graham cracker crumbs
1/3 c. sugar
1 c. milk
3 tsp. baking powder
2 tbsp. shortening
2 eggs
1/3 c. nuts, chopped (optional)

Sift flour, baking powder and salt together; stir in nuts, if desired. Blend 6 full size (4 sections each) graham crackers, or enough to equal one cupful; remove from container and add to flour mixture. Place shortening, sugar, milk and eggs in container. Mix until well blended. Add flour mixture. Blend only until flour is dampened. Stop mixing and scrape mixture from side of container with rubber spatula. Fill well-greased muffin pan about 2/3 full. Bake at 400 degrees for approximately 25 minutes.
