TAPIOCA PUDDING 
3 c. milk
2 egg yolks
1/8 tsp. salt
1/2 c. scant sugar
4 1/2 tbsp. tapioca
2 egg whites
3 tbsp. sugar
1 1/4 tsp. vanilla

Mix first five ingredients in microwavable bowl. Bring to boil. Add quickly to egg whites that have been beaten stiff with 3 tablespoons sugar. Add vanilla. Chill, stirring once. Optional - can serve plain or with fresh or canned fruit.
