TIROPITES - GREEK CHEESE
TURNOVERS
 
1 lb. filo dough
3/4 lb. melted, unsalted butter
1 lb. feta cheese
1/4 c. parmesan cheese
2 eggs
Ground white pepper
Chopped oregano, to taste
Olive oil

Crumble the feta cheese and combine with the parmesan, eggs, oregano, 1 tsp. olive oil and lots of pepper. Mix well. Butter a cookie sheet. Take 1/2 lb. of the the filo dough and place the sheets carefully on top of each other, brushing each sheet with the melted butter. Cut the layered sheet into 9 even squares, the should be 4 1/2 inches across. Place a spoonful of the cheese mixture in the center of each square, moisten the edges with water and fold over so that it becomes a triangle. Press firmly to seal. Brush with more butter and bake at 350 degrees for 1/2 hour or until nicely browned. Serve hot. Repeat with the rest of the filo dough.
