SPINACH POPEYE BURGERS 
1 lg. can spinach, chopped
2 eggs
1 c. matzo meal
Light frying oil
Salt, pepper, garlic powder or flakes

Combine drained spinach, eggs and matzo meal. Add seasoning. Mix well. Tablespoon into frying pan, preheated with oil. Fry well on each side until golden brown. Drain on towel. Can be served hot or cold. Great side dish!
