2 cloves crushed garlic
1 lb. lean flank steak
2 tbsp. corn oil butter
2 1/2 c. diced green peppers
2 lg. tomatoes (cut into wedges)
3 c. hot cooked rice

Blend together soy sauce, water, cornstarch, pepper and garlic. Thinly slice steak on an angle across the grain; mix into soy sauce mixture.

Melt butter in skillet. Add green peppers and saute until almost tender. Mix in meat and soy sauce mixture. Cook stirring until meat loses red color, about 5 minutes. Stir in tomatoes and simmer until tender. Serve with rice. Makes 4 servings.
