LEFTOVER MASHED POTATO PATTIES 
Leftover mashed potatoes (about 1 quart)
1 onion, diced
1 egg
1 c. cheese, grated
Flour
butter
Salt and pepper

Combine mashed potatoes, onion, egg and cheese. Shape into large size balls. Roll into flour and flatten into patties. Melt butter in frying pan and brown for about 5 minutes on each side. Salt and pepper to taste.

Better not use butter... Use only Crisco for frying these patties! My Mom made them for years. When I married my wife, I tried her 'simple recipe': 'Make patties from mashed potatoes in last night's dinner.' Dismal failure... Took a phone call to Mom, who laughed and said "Crisco."

Made this for the first time and they were delicious! I fried them I a little coconut oil and butter. Gives them a bit of a crust finish and served them with left over stuffed peppers.

I'd made potato skins the night before & used the leftover potatoes to make these patties. I added a bit of melted butter & a bit of milk to the recipe to make more of a mashed potato consistency. Added leftover bacon bits. After golden brown in pan, popped on a cookie sheet in a 350°F oven while finishing dinner! Pow! These were amazing. Added a dollop of sour cream on top, just a tad. Guess what, had these cooled a few hours later & they were even better. Just fantastic recipe. Thank you for posting.
