CHEESY POTATOES 
4 med. potatoes
1 tsp. salt
3 tbsp. melted butter
1 tbsp. chopped parsley
1 tbsp. chopped chives
1 tbsp. chopped thyme
4 tbsp. grated Cheddar cheese
2 tbsp. Parmesan cheese

Peel potatoes and cut into thin slices but not all the way through. Set a spoon next to potato to keep from cutting all the way. Put potatoes in baking dish and fan slightly. Sprinkle with salt and herbs, and drizzle with butter. Bake at 425 degrees for about 50 minutes. Sprinkle cheeses and bake additional 10-15 minutes.
