OATMEAL ICEBOX COOKIES 
1 c. flour
1/2 c. brown sugar
1/2 c. granulated sugar
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. shortening
1 egg
1 tsp. vanilla
1 c. oatmeal, uncooked
1/2 c. chopped pecans (optional)

Cream sugars, shortening, egg and vanilla. Add dry ingredients and mix well. Make into long rolls and roll in wax paper. Place in refrigerator for 3 to 4 hours or overnight. Take out and slice 1/4 inch thick. Place on greased cookie sheet and bake at 350 degrees for 10 to 12 minutes.
