RICOTTA HOTCAKES 
1/2 lb. ricotta
2/3 c. milk
1/2 c. flour
1 tsp. baking powder
3 eggs, separated
1 tbsp. sugar
Dash of salt

Beat egg yolks with cheese until smooth and thick. Add milk, flour, baking powder and salt. Beat egg whites until stiff peaks form adding the sugar gradually. Fold into batter. Fry on lightly greased griddle until brown on both sides.
