CHERRY SOURS 
1 1/2 c. mashed fully ripe banana (approx. 3 med.)
1 1/4 c. sugar
1 (3 oz.) pkg. cherry flavored gelatin
1/4 c. honey
1/4 c. lemon juice
1 tbsp. butter
Sugar

In 2 quart saucepan, combine banana, the 1 1/4 cups sugar, gelatin, the honey and lemon juice. Bring to boiling; cook, stirring constantly, until candy thermometer registers 242 degrees and mixture pulls away from side of pan, about 25 minutes. Stir in butter. Cool slightly. Spoon by teaspoon onto waxed paper. With buttered fingers shape into balls, roll in sugar. Makes about 5 dozen.
