CHERRY CARROT CAKE 
2 c. cooked, mashed carrots (1 pkg.)
3 c. flour
2 c. sugar
1 1/2 c. oil
4 eggs
2 tsp. baking soda
2 tsp. baking powder
3 tsp. cinnamon
1 tsp. ginger
1 tsp. vanilla
1/2 tsp. salt
1 sm. jar maraschino cherries (chopped)
1 c. chopped nuts

ICING:

1 pkg. (3 oz.) cream cheese
1/4 lb. butter
1 box powdered sugar

Mix carrots, sugar, eggs and oil. Mix remaining cake ingredients. Pour into greased, floured round or oblong cake pans. Bake at 350 degrees for 45 minutes. Let cake cool.

Prepare icing and spread on top.
